Meritorppa’s Fish Platter Skagen with hand-peeled North Sea shrimp, whitefish roe mousse, smoked vendace, cured whitefish, juniper-marinated Baltic herring, dill potatoes, and mustard sauce.

Air-Dried Beef with marinated red cabbage and spiced mustard mayonnaise.

Main Course

Char-Grilled Salmon with saffron risotto, fennel, and orange crème fraîche.
