Meritorppa Seafood Platter: Skagen made with hand-peeled North Sea shrimp, whitefish roe mousse, flame-grilled salmon, gin-cured whitefish, glassmaster-style vendace, dill potatoes, and maître d’hôtel sauce.

Smoked duck breast, beetroot and green peppercorn sour cream

Roasted salmon, lobster-potato gâteau, spinach, and horseradish ravigote
